Depends on what floats your boat.
FPS - Mass Effect 1 & 2 - Both are very pretty, but very flat on story and "acting", also quite short.
Assassin's Creed - Very Pretty, heard good things, other than it is short.
Crysis - Beautiful, but short. I think still used as a benchmark for systems.
RTS - Starcraft 2 coming out end of the month.
Command & Conquer - many facets of this franchise are still going strong, though there have been some dramatic changes with the game design in C&C3
Action - Diablo 3 - don't hold your breath as it isn't due out till next year sometime
Fable 1 & 2 - pretty fun, not graphics pushers though, many choices
Elder Scrolls - Older than some, but the mods available give many choices
Overlord 1 & 2 - could go in RTS of a sorts, fun game, looks pretty
Transformers - Fun, but incredibly short, the Decepticon levels are very boring
Prince of Persia - The latest is quite good, very close to Sands of Time
Racing - Need for Speed Shift - fun, but little too linear
Need for Speed Hot Pursuit - not sure on a release date, but looks like a blast
Drift - Getting good reviews and looks pretty
MMO - WoW - massive game change coming with the new expansion
Warhammer - no endlevel to speak of unless you like pvp, and even then
Star Trek Online - boring as hell
There are numerous ones that I missed, but that should give you a good start.
